Kenyan Style Pancakes – Crepes

Nothing beats Sunday morning pancakes. Make delightful, light, crispy, buttery, and thinner than regular pancakes from scratch. A favourite in any Kenyan household using only 10 ingredients you probably already have. Below is my favourite recipe, the Kenyan way, for your delight!

Ingredients
  1. 1 cup Wheat flour
  2. 1/3 cup Sugar
  3. 1/2 teaspoon Salt
  4. 1 teaspoon Ground Cardamom or Cinnamon) (optional)
  5. 1 cup Milk
  6. 1 Egg
  7. 1 tablespoon Butter/Margarine (melted) (or vegetable oil)
  8. 1/2 cup Water (adjust to your liking)
  9. Zest of 1 lemon (optional)
  10. Juice of 1 Lemon (optional)
Instructions
  1. In a clean mixing bowl, sift flour then add all the dry ingredients (sugar, salt, ground cardamom,) and mix thoroughly.
  2. Make a well in the middle of the flour mixture then add the egg, milk and butter or oil. Mix with a whisk of eggbeater until the butter is smooth and free of any lumps.
  3. Add water is small quantities as you mix until preferred consistency is reached. For thin crispy pancakes go for a thinner butter for thicker fluffier pancakes let batter be slightly thicker.
  4. Add lemon zest and juice or vanilla extract and mix well.
  5. Heat a clean skillet or non-stick pan on medium heat and spread some oil evenly.
  6. Once hot, use a ladle and pour in some batter depending on the size of pancakes you want. (Use your instincts).
  7. Cook for about 2 minutes or until it turns brown and the top looks touch dry and has small holes formed.
  8. Flip and cook the other side for about 2 minutes or until browned.
  9. Remove from the pan and place on a clean plate.
  10. Repeat the process for the remaining batter.
  11. Fill, fold and serve and ENJOY!
Notes
  1. When serving, serve with a drizzle of your favourite syrup, some whipped cream and a fruit of your choice. Be creative as you plate and garnish!
